I am a little late posting this morning. I had to play out in the snow first It’s Friday! And it is another snow day here in Omaha! We are having a super long extended weekend and I am loving it. Last night we received about 8 inches of steady snow. It wasn’t the big snowmaggedon snow storm I was hoping for. It never is. All these winter storms seem to be so overhyped. The eight inches of beautiful fluffy snow makes up for the fact that we didn’t have the blizzard that was predicted.
Last night I used some of that perfectly white fluffy snow to whip up a batch of snow cream (recipe below). It tastes almost as good as fresh homemade ice cream. A real treat and a delight to my little girls. If you have some clean snow I recommend whipping up this seasonal treat.

4. America’s Test Kitchen’s New Cookbook
I saw this cookbook featured earlier in the week on The Kitchn. I love ATK and I obviously love experimenting in the kitchen. This cookbook has been added to my wish list!
5. House of Cards
House of Cards is a Netflix orignal series streaming right now. I love it. Kevin Spacey is great as a Congressman from South Carolina. Instead of voice overs of an omniscient narrator Kevin Spacey’s character breaks the fourth wall and looks directly into the camera to fill the audience in. I recommend you check it out! This month’s issue of Diabetic Living magazine features six lemon dessert recipes I developed. I had such a blast creating these treats! Thank you to my family and friends who were my taste-testers. I was so excited when I saw my name in the magazine! I love cooking for family and friends and it makes me so happy to develop these recipes for this magazine knowing that my hard work will be enjoyed by many more people than I could feed.
Recipes include: Lemon-Poppy Seed Angel Cake, Lemon Cheesecake Bites, Lemon Meringue Tarts, Lemon-Lavender Frozen Yogurt (my fav!), Lemon-Ginger Shortbread, Easy Lemon Souffles

8-10 cups fresh snow
1/3 cup granulated sugar
1 1/2 cups skim milk
1 1/2 cups fat free half & half
2 teaspoons vanilla extract
Scoop up the clean snow in a large mixing bowl. Pour in all the other ingredients and mix together.
You will notice the texture of the snow changes as you mix it. If it isn’t quite “ice cream” enough texture you can add slashes of milk until it is smooth and creamy.
Eat right away. It will melt quickly! Enjoy!
